Cooking Instructions:
Preheat your oven to 500 degrees or the highest it
will go. Salt and pepper the natural fat covering the roast. place
the roast, rib bone side down, in a roasting pan. If you use
a meat thermometer, place it into the meat making sure that it does
not touch the bone.
Place the roast in the pre-heated oven. After
15 minutes reduce the heat to 350 degrees and roast until done to your
liking.
To figure the cooking time, allow 15 minutes per pound
for rare, 20 minutes for medium, and 25 minutes for well done. We
do not recommend that you cook this roast any more than medium.
When the roast has reached the internal temperature
for rare 120 degrees, medium 135 degrees, or well done 150 degrees,
remove from the oven and let rest for 15 minutes. The roast continues
to cook and the juices gently settle back into the meat.
With a knife, cut the strings which attach the meat
to the bones then care the meat making slices about 1/4 inch thick.
