At Corti Brothers we carefully handcraft our standing rib roasts, the result of old fashioned, prideful workmanship on the part of our master butchers.

Corti Brothers uses the full seven rib cut from USDA Prime or Choice beef. The undesirable fatty flap called the "lifter" and any other other excess fat and bones are removed making a compact uniform shape. We separate the rib 'eye' from the rib bones and then tie them back together thus making a "cradle" from the bones for the roast "eye".

These extra steps are taken so that the roast retains its full flavor from cooking on the bone and yet is simplicity itself to carve. In fact, if you can cut a string, you can carve our cradled "King of Roasts."

It is this attention to detail that makes this the finest roast available. Our "King of Roasts" cost more but then you receive qualities which you and your guests will be able to see as well as taste.
