I know. We now get fresh fruit from Chile. It’s their summer. But there is something homey and comforting about jarred fruit in the winter that cannot be replaced by fresh fruit. Guallarauco is the brand name of some of the most delicious fruit in a jar I have tasted.
Using some old cultivars and traditional techniques, the Piwonka family has given us exceptional Baby Peaches (Saint Joseph’s little peaches), Wild Baby Pears (peritas silvestres), and Huesillo. The first two are straight forward: delectable, perfumed, miniature versions of the fruit. Huesillo is a Chilean specialty made from yellow fleshed, normal sized clingstone peaches which are sun dried and then rehydrated in light sugar syrup. Wrinkled, tasty and the essence of yellow peach, huesillo can be used very well with hot breakfast cereals, like oatmeal, lending a novel, almost exotic character.
