 Kallari Chocolates: Unique Beans, A Unique Idea  

The Kallari Association in Ecuador has, in less than two years, proven that the growers of cacao beans can transform them into money by working them into chocolate themselves. The botanical origin of Theobroma cacao is Ecuadorian Amazon, where the unique Cacao Nacional varietal is produced. The 800 Kichwa Indians families of the Napo region of Ecuadorian Amazon occupy a territory about the size of the state of Rhode Island.

In this region they grow Cacao Nacional, a cacao bean of unique complexity and flavor. In 2005, using their own beans plus cocoa butter, raw turbinado sugar, and vanilla, they began production of chocolate. Unlike most other cacoa beans, these have no need for methyl bromide as a fumigant to prevent mold, toxic fungi, and vermin damage. The beans are very quickly converted to chocolate.

The unique fruity, floral flavor of the Cacao Nacional bean has been recognized for a long time. This organic, shade grown Cacao Nacional grown by the Kallari communities has gained recognition for them by having their cacao named as a “Slow Food Presidium” by the international Slow Food organization in Italy.

Truly flavorful, with a clean, soft, fruity taste, Kallari chocolates are available only in 1.76 oz (50g) bars in three cacoa percentages: 70,75, and 85%.
