Corti Brothers Newsletter for December 2007 Page 2 Loison Panettones (cont.)
This is a panettone uniting the two emblematic Italian Christmas sweets: torrone, nougat made with almonds, egg whites and honey, with traditional Christmas panettone. Torrone bits are added to the dough and melt into the cake. Unique and exclusive to Loison.
The late mandarin from Ciaculli, a suburb of Palermo, Sicily, produces the distinctive flavor of this cake. Its distinctive fragrant aroma from rind oil and candied peel, replace other citrus fruit in this panettone. Unique, the citrus is a Presidium Slow Food product. This is a Loison exclusive.
Before the turn of the last century, bakers vied for whose tin was the best presentation. For the second year, Loison has produced a lithographed tin with old Christmas scenes and a cord handle; it remains a conversation piece after Christmas is gone. The decoration will always vary with selections from the Loison museum collection. Inside is a cellophane wrapped panettone. If you enjoyed one last year, here’s the second one.
