  Raisins for Cooking and for Eating  

California produces most of the raisins made in the US. In fact, they come from California’s Central Valley, where raisin varieties of grapes grow well and then can be dried. If you didn’t know, raisins are dried grapes.

An old friend, Marko Zaninovich, whose family has produced high quality raisins for more than 60 years, just recently produced the line called Sun View of organically grown grapes which were dried into raisins from three different colored varieties: Green, Red, and Black. You might say that after drying, all raisins look dark. Yes, but some original skin color remains due to natural pigment. Thus, wanting a lighter or darker colored result in your baking, for example, you can regulate this with the new Sun View Organic Raisins. Flavor is also slightly different with each cultivar. Jumbo sized, there is a lot to taste.

Just slightly different are the Cluster Seedless Raisins from Circle K Ranch near Fresno. Cluster raisins are an old fashioned style where the raisins are still on stems. They are attached to their cluster, and present a very pretty plate looking like a dried cluster of grapes. These were usually served with winter citrus, dates, nuts, and other dried fruit at the end of holiday meals. It is a delicious tradition that should be continued.
