As Do Mar Tuna from the Azores - Not Just Another Tuna!
As Do Mar tuna from the Azores is one of the finest tunas on the American market. It is a perennial favorite and our best selling tuna. We offer three styles of tuna: the tronco, cut from the torso, the filetti from the loin and the ventresca, the gourmet cut from the belly. They are different, from different parts of the fish, but all cuts are terrific and can be used interchangeably.
There are many factors that make a good tuna "good," but what makes As Do Mar tuna one of the best tunasavailable?
The Oil
As Do Mar tuna comes packed in a high quality olive oil for flavor enhancement.
A good quality olive oil enhances the tuna flavor without being overbearing. Many common tunas are packed in a less expensive vegetable oil, an indicator of the lower quality of the tuna.
The Flavor
Yellowfin tuna has a higher fat content than albacore tuna, imparting a rich, hearty flavor, comparable to good swordfish, but at a fraction of the price.
As Do Mar's gourmet tuna is made from yellowfin tuna, which yields dense solid fillets, a pink to reddish color, and a richer flavor than found in white or albacore tuna.
In his book Flavors of the Riviera, Coleman Andrews, editor at Saveur Magazine, offers this version of the definitive Salade Niçoise. See the recipe...
Albacore tuna, bluefin, yellowfin, tongol, bigeye, skipjack...so what's the difference? Are all tunas created equal? See our quick guide to tunas for a quick course in tuna gastronomy.
As Do Mar knows there's more to life than tuna. Now available from As Do Mar - Mackerel and Sardines too.
Dolphin Safe
As Do Mar tuna are line caught, which means the harvesting process is "dolphin safe." (No dolphins are accidentally caught in the nets along with the tuna.)
No nets also means higher quality tuna. With hundreds (or thousands) of pounds of fish piled atop each other, the fish on the bottom become crushed in the net and the flesh is easily bruised, yielding a much lower quality product.
Packed fresh!
Straight from the can, As Do Mar tuna has little or no fishy smell. This means the fish was packed fresh, not left on the docks to bake in the sun all day (encouraging premature decay and hence the "fishy" smell often found with lower quality tuna.)
If you're looking for a really great tuna, look no further. As Do Mar's offering of tunas is sure to please.
As Do Mar Filetti Tuna in a glass jar packed in olive oil is from fresh, line-caught fish. There are four triangular pieces of tuna, packed standing up in a 5 inch tall jar.
Very meaty tasting, they are ready for summer’s bounty of tomatoes and other veggies for making salads and almost instant meals.
Jarred tuna with its delicate flavor is different from the canned version. If you like the cans of As Do Mar Tuna, you’ll love the jars.
If you want the best in tuna, this is it: As Do Mar Ventresca tuna from the belly meat of the fish. Tuna gourmets covet the ventresca cut above all others for it's creamy texture and buttery flavor.
Ventresca is something of a prize when found, as most is exported to Japan for use in sushi. If you simply want the best, look no further than As Do Mar Ventresca tuna.
This is As Do Mar's "best value" in tuna. "Tronco" means from the trunk or torso. As more meat is available from the torso than either than belly or loin, you can still enjoy the same high quality you expect from As Do Mar, but at a price to please the pocketbook.
